October is such a fabulous month; the Marine and I met 11 years ago on Columbus Day Weekend. Woohoo! Plus, it's the start of massive amounts of sugar consumption now until Valentine's Day. Who knew, right?
With all that candy floating around, I've figured I should meal plan something healthy for us, that is until the Marine goes off to training for a couple weeks again. He's a busy fellow. Oh, and if you can spare some prayers one of his Marines went to the doctor this weekend for dizziness, headaches, and crossed-eyed vision and it turns out he has a BRAIN TUMOR! Surgery is scheduled for Monday and the family is shocked, as you can imagine. He's only 22...
Okay, so back to meal planning loveliness!
1-Saturday: Marine made Steaks and au gratin potatoes while I was painting the kitchen.
2-Sunday: Small Group Dinner: breakfast burritos
3-Monday: Spaghetti and garlic bread with salad
4-Tuesday: Chili
5-Wednesday: Baked Potatoes, leftover chili
6-Thursday: Salmon
7-Friday: Stuffed Pork Tenderloin
Dessert: Persimmon and Cinnamon Crumb Cake
8-Saturday: Mediterranean Chicken
9-Sunday: Small Group Dinner
10-Monday: Loaded Baked potato soup
11-Tuesday: Tortellini and roasted red pepper pesto
12-Wednesday: Baked Acorn Squash
13-Thursday: Chicken Pot Pie
14-Friday: Stuffed Cabbage Rolls
15-Saturday: Homemade Mac and Cheese
16-Sunday: Small Group Dinner
17-Monday: White Chicken Chili
18-Tuesday: Pizza, typical first night of aloneness eating
Yes, most of the meals are heartier, but breakfast is granola or cereal and lunch is sandwiches, soups, or salads. The rest of the month, I'll be eating cereal, pbj, pizza, ramen, tomato soup and grilled cheese; typical single-ton military food for spouses. LOL. Cooking for one is not typically fun, although sometimes I'll cook and Belle will get some, too.
