Broccoli Cheddar Soup in the Crock Pot
5 cups chopped broccoli
6 cups vegetable broth
3 large shredded carrots
1 diced onion
1 clove diced garlic
1/4 teaspoon nutmeg
1 1/2 cup skim milk
4Tablespoons butter
3 Cups EXTRA sharp cheddar cheese blend
salt, pepper to taste
In crock pot on high add onion, garlic, butter, nutmeg. Stir to melt butter and brown onions and garlic. Adjust temperature to low or high and add in vegetable broth, milk, broccoli, carrots, salt, and pepper. Stir to combine. Cook on low 6 to 8 hours or low for 4 hours. Add in cheddar cheese. Use immersion blender to chop down most of the broccoli into smaller pieces, if preferred.
Cook additional 30 minutes on high. Serve with cheese on top or bacon.
